Salted mango ഉപ്പുമാങ്ങ (is a popular recipe traditionally served as a side dish for boiled rice and porridge. Raw and mature green mangoes are handpicked for making this recipe. The sour taste of raw mangoes combines well with the salty flavour, along with spicy green chillies gets you one of the most loved side dishes for rice porridge. Kerala, with its tropical climate conditions, favours the cultivation of mangoes. Each household would have at least one mango tree which is loved by all age groups, especially the young ones. Green, mature mangoes are sliced to medium pieces, kept in large glass jars or ceramic containers along with the fresh lukewarm saltwater solution. Green chillies in the slit or chopped form are also used to enhance the spicy flavour. Keeping aside for a couple of weeks, the mango pieces get to absorb the salt and become soft.
